july 31, 2012 lunch

leftover stovetop pork carnitas. i ate some last night for dinner too (with avocado! sadly, one did not make it into my lunch today), but it seems to have been consumed with no paparazzi in sight. today, though, a camera was ready and waiting and caught a bowl of citrus-y, cumin-y pork shoulder in the act of posing with a starlet of a salad.

july 27, 2012 lunch

a lunch of country captain chicken from paleo comfort foods (chicken breaded with almond flour and curry powder, broccoli, more tomatoes than you can shake a stick at, onions, etc. all cooked in a yummy broth), plus purple coleslaw and a salad. i know i haven't been consistently posting dinner photos, but the country captain chicken is leftover from wednesday night. it has some strange ingredient combinations, but it's pretty good!

july 22, 2012 brunch

kitchen sink omelet with a filling of sauteed chard, cherry toms, basil, green onions and garlic, served alongside a couple slices of bacon.
here's what it looked like pre-folding.

july 17, 2012 lunch

very similar to yesterday's, except i remembered to dress my salad (i didn't send it running naked out the door). tasty fuel for the rest of the afternoon!

july 16, 2012 lunch

today's lunch is chicken awesomeness, a salad of beet greens, mizuna, romaine, cucumbers, grape tomatoes, kalamatas and red onion, and a cup of green tea. but the chicken! the flavor and moistness certainly live up to its name: the best chicken you will ever eat ever. brining is key, and the solution to every overbaked, dry chicken breast i've ever eaten. a new favorite!

july 13, 2012 dinner

breakfast for dinner! friends from portland came up, and had already eaten, so i threw together a quick scramble of eggs, bacon, asparagus, tomatoes, basil, and garlic. it was a warm evening, so i opened the balcony door and ate sitting cross-legged on the floor, catching up.

july 12, 2012 lunch

i think the eggplant and sausage strata is officially no longer a strata, but the flavors really came together over the last few days! it is served up alongside the standard salad from this week and a cup of green tea.

july 11, 2012 lunch

more of the eggplant & sausage strata for lunch, plus salad with our homemade mayo dressing. have i mentioned lately how devourable the eggplant strata is? i might get sick of eating it everyday at some point, but not yet. good thing - there is a lot of it!

july 10, 2012 dinner

i ended up getting home late, but a bowl of leftover sausage & eggplant strata was ready for me. and i was ready for it!

july 10, 2012 lunch

tuesday lunch is butternut squash, kale and chicken sausage, plus a salad of cucumber, tomato, celery, roasted red pepper, carrot, romaine and arugula. the creamy italian dressing made with homemade olive oil mayo tops it all off.

july 9, 2012 lunch

we had some chicken sausage to get through (we usually bring some sausages as back-up camping food), so we sauteed slices of it up with kale and butternut squash. a tasty combination! for salad, we're branching out from the usual vinaigrette with a homemade olive oil mayo-based creamy italian dressing (another great recipe out of well fed), tossed with romaine, arugula, tomatoes, cucumbers, and celery.

july 3, 2012 lunch

hoo boy, that beanless chili right there might be one of the hottest things i've ever eaten. i'm a three to three-and-a-half star spice eater, but man, this thing was off the scolville charts. i think because it has three kinds of peppers: ancho, chipotle in adobo, and dried red peppers in it, with ground cayenne just to give it that little extra painful kick. the flavor beneath the raging capsaicin fire is really nice, though. it has two kinds of meat (round steak and grass-fed ground beef), red and green bell pepper, tomatoes, and onions.
note to self: although i habitually consume my veggies first, in this case, it would have been nice to have a little coleslaw or greek salad to douse the flames!

also, i think those olives are huddling together in fear and awe of the chili. (didn't your momma tell you not to anthropomorphize your food?)

july 3, 2012 breakfast

breakfast is an experimental frittata with bacon, spinach, roasted tomatoes, roasted garlic, mushrooms, and green onions. i think it turned out quite well! on the side is leftover roasted broccoli, with garlic and red pepper flakes. tasty!

june 18, 2012 dinner

it's a rainy seattle night, and it's cozy listening to the cars and buses driving through the standing rain on the road outside, while i am inside in my pajamas, eating taco salad.
tomatoes, avocado, red onion, black olives and cilantro complete the picture.

june 18, 2012 lunch

a hearty lunch. tuna salad (wild planet tuna with red onion, celery, and homemade mayo) atop romaine, cucumbers, and baby heirloom tomatoes (a trader joe's find), coleslaw (with more of that homemade mayo), plus collard greens and curly kale from my boss' garden, fried up in bacon fat, with bacon pieces for good measure, and smashed garlic. so good!

june 16, 2012 dinner

good company warrants a good spread. alex and rachael came up from portland, and we met them halfway at potlatch state park on the hood canal. most of the campground is nothing to write home about, but we secured a sweet, secluded spot (93, if you're interested), way up in the trees and ferns. nobody around but jays and chestnut-backed chickadees.
this is alex's dinner, chicken grilled in foil, with tomatoes, zucchini, onions, and lemon-thyme from their garden, plus some fresh baby heirloom tomatoes and a few sheets of toasted sesame nori for good measure. looks delish!
rachael follows suit a bit later with the addition of roasted potatoes and a chicken sausage from otto's sausage kitchen in portland. quite good! (i ate the other half of that sausage, btw.)
we roasted some radishes in the campfire coals, a technique that my sister taught me when we were camping over memorial day weekend. radishes become quite mellow and slightly sweet when tossed with a little olive oil and folded up in some foil, then left to their own devices in the fire..
in the meantime, rachael broke out the strawberries, dipped them generously in marshmallow creme, and grilled them over the fire, s'mores-style..
we grilled up some asparagus, managing not to char them too badly..
..and set some lamb skewers on the grill shortly thereafter. they'd been marinating in olive oil, lemon juice, chopped fresh parsley and thyme, and so on. note the bay leaf still clinging to the lamb.
the super-yummy finished product. served up slightly rare, and still a bit mouth-scalding, but tender and juicy and all that grilled lamb eaten while camping should be!
