august 3, 2012 dinner

it's still light out when we arrive, but by the time we get our campsite set up, it's pretty dark. (it's a walk-in site, so we have to carry everything down a steep path to the riverbank, where our campsite is.) we're staying at ohanapecosh, on the southeastern side of mt. rainier. it's in a lovely old growth forest, with the turquoise ohanapecosh river flowing right by our tent. grilled zucchini and japanese eggplant, brushed with garlic oil, as well as mushrooms (not shown) are starters.
two of these sausages are for tonight, and two will be cold munchables for tomorrow. it feels late in this old forest, even though it isn't, so off to tent!

august 3, 2012 lunch

leaving in a couple of hours for mt. rainier for the weekend! first, the last of the italian sausage & eggplant strata and a salad.

august 1, 2012 dinner

we are quite fond of the pork and eggplant strata from well fed. this is the third or fourth time we've made it, this time using pork from wapinitia farm in oregon. so delicious!

july 28, 2012 dinner

oysters on the grill! dinner at my dad and stepmom's, out on their deck.
a pretty plateful of sirloin steak, lamb heart, japanese eggplant, caulliflower, mushrooms, heirloom tomatoes and blueberries. the veggies were basted in garlic oil and i wanted more of them. i only had a nibble of the heart (not feeling lamby) and half the steak.
saved room for my stepmom's homemade blueberry ice cream, made with fresh blueberries, coconut and rice milk. perfect!

july 12, 2012 lunch

i think the eggplant and sausage strata is officially no longer a strata, but the flavors really came together over the last few days! it is served up alongside the standard salad from this week and a cup of green tea.

july 11, 2012 lunch

more of the eggplant & sausage strata for lunch, plus salad with our homemade mayo dressing. have i mentioned lately how devourable the eggplant strata is? i might get sick of eating it everyday at some point, but not yet. good thing - there is a lot of it!

july 9, 2012 dinner

ok, so you'd think well fed is the only cookbook i ever use, but this recipe for italian sausage and eggplant strata is absolutely scrumptious. like wanna eat the whole thing right now scrumptious. it's eggplant, hot italian sausage (we deviated a bit from the recipe, which just called for regular pork sausage), and a tomato-onion-basil-garlic sauce with a few beaten eggs thrown in for texture. it's one of those recipes that only improves as leftovers too!

june 19, 2012 breakfast

i admit it, the baba ghanouj looks like it was piped onto my plate. but even though it looks watery and insignificant, i can't lie, it has a flavor you can't refuse.
and, as seen on tv! egg loaf, featuring bacon, spinach, zucchini, roasted red peppers and sun-dried tomatoes!
