the bacon grease we cooked the kale in last night had to come from somewhere, and sure enough, there's bacon hidden in this frittata, along with roasted broccoli, roasted red pepper and eggs. it was pretty simple to throw together last night, but the flavors all complement each other nicely. that's the beauty of frittatas, omelets, and scrambles - they pretty much work with whatever you have on hand!
